Ground Turkey Lettuce Wraps | Something to be SavoredI could eat tacos every day. Think of all the variety! Chicken, beef, fish… topped with veggies, sour creme, guac, cheeses… the possibilities are endless. And best yet, I think they taste just as phenomenal when you replace the taco shell with crispy iceberg lettuce!  We usually make these with ground turkey in my house so they’re pretty healthy, but you could use ground beef or chicken instead.  And just like any tacos, these fantastically dynamic tasty noms can be topped with anything that tickles your fancy.

Although it’s a “suburbanite chain,” I’m not afraid to admit that I love me some P.F. Chang’s.  At all my favorite restaurants, I have a staple dish that I rarely ever stray from. I also thought that a guilty pleasure of mine was Taco Bell (although I haven’t had it since college — apparently there’s a reason), but was kind of disgusted by the thought of the goopy-jarred-nacho-cheese-and-ground-beef-combo called for in this Taco Bell Crunch Wrap Supreme recipe. Chicken Limoncello | Something to be SavoredA friend recently sent me her favorite coconut shrimp from a restaurant, suggesting I try to make it myself.  While the recipe is on the back burner (only until I go out and buy some shrimp!), the idea is on the front burner. So today, I give you the very first Restaurant Replica, a post in which I replicate some of my favorite dishes from local restaurants.  There is a great Italian place in West Chester, PA called Limoncello. If you go, you should get their signature dish. I was not going, but I decided I wanted that damn signature dish anyway. Spicy Turkey Sausage, Spinach & Ricotta Stuffed Shells

Any time I have to either (a) cook for a crowd, or (b) cook a meal ahead of time and reheat it later, I make my default meal.  This week I’m doing both, so that means this week, I made my default meal.  Stuffed shells are the perfect dish to cook in mass amounts, to reheat later.  I won’t claim that they are incredibly healthy, but I will claim they are incredibly delicious. On of my friends has refused to order chicken salad at a deli or restaurant ever since I made her this recipe. This chicken salad spoils people.  And… it’s healthy.  That’s right.
